Update

Hey everybody! First of let me start by saying sorry for being MIA for the past week or so. I won't be back here on my little blog for another 2 weeks. I have a lot of things in my personal life that I'm trying to get under control at the moment. I also ended up getting sick. Not sure if it was bad food or stomach virus but it sucks anyways. Hoping nobody else in my home gets sick. Also, the 365 hair project is still going strong. I haven't gotten a chance to take pictures or post but it's still going. Can't wait to be back soon.

Plain Jane Carrot Cake

Here's a plain and simple carrot cake recipe that's popular here at my home.
I'm sure you can tweak the recipe to make it more healthy.
Most of the carrot cakes here have added spices to enhance the flavor however I like it simple!
 It taste better for me =)

Ingredients:
 6 medium/large carrots shredded
4 large eggs
1/2 xicara (tea cups) oil
1 tablespoon baking powder
2 1/2 xicara (tea cups) flour
2 xicara (tea cups) sugar

1 xicara (tea cup) is about 7ounce?

Directions:

Peel off skin of carrots and then shred.

In a mixer, mix eggs and sugar for about 2 minutes. Then, add oil, flour and baking powder and mix it all together. Lastly, add shredded carrots and mix again until everything is blended in.
Place in a pan and bake at 350. I'm not sure for how long. I checked periodically. Insert a toothpick and if nothing sticks it's ready. Let cool and serve.

PS. Personally I would cut back on the sugar but it was a new recipe so I was afraid it wouldn't taste right.

Strong is the new Skinny

This is my final straw! I'm getting tired of looking at myself and not recognizing who I am anymore. I'm disappointed at myself for letting it go for this long and giving up at the first sign of weakness. And I am tired of always saying tomorrow day after day.

First step is recognizing you have an issue.
I've been struggling with weight issues since my pre-teen days and jumping on all sorts of diets. 
I'm at my heaviest I've EVER been and I'm not happy about my body. 
 With weight issues comes lack of self confidence and self-esteem.
 I won't deny that I struggle with that on a daily basis and it's something that I'll have to work on while going on this journey to a healthier, more energetic and more confident ME. 

My goals isn't exactly to lose weight and be skinny. I want to lose weight and be strong and FIT!
I want to be able to walk out the door with my head held high and not give a damn about anybody thinks because deep inside I know I'm happy with who I am, how I look and how I feel about myself.

My second step is to make myself accountable. 
I thought about making a separate blog all about health, fitness and eating right.
I just don't want another blog to keep track of. I didn't want to become overwhelmed with keeping up with 2 blogs. Figured the best route and least stress way would be posting here daily or weekly on my updates and whereabouts in this journey to a healthy me. 
For those who are interested I'll add labels to the left of my blog for healthy recipes and work-outs. 

Third step is pretty simple but the hardest of them all.  
Like good old Nike always say,
JUST DO IT. Then, DO IT AGAIN


No more excuses for this gal. 
I'm on a one way train to a better, healthier and more confident me.

It's OK Thursday

First Thursday of the year wich means it's the first It's OK Thursday of the year!!!

Here we GOOOO!!!

It's OK

to hate the feels like below zero weather  even though it's 12 degrees in the mornings and about 20 during the day! Lucky us it's only for 2-3 days before it's back in the 40-50's where winter is berable.

to hate winter because of it freezes pipes and then burst them which then causes me to clean about an inch of water from our basement and a non-working laundry room until later today =/ Glad the basement isn't finished and we don't have anything of value down there....

to feel naked without any nail polish on

to have resolutions and do everything possible to keep them alive and going this year!!

to keep saying tomorrow when it comes time to giving your dog a bath... I've been saying tomorrow since the 31st!!

to tut your own horn when you start to figure out how to design your own blog!!! Tut tut =) baby steps!!!

Three.Sixty.Five to healthy hair


Three hundred and sixty five days
A big commitment to healthier hair
I dont know why I would do this but it seemed like something I could tackle head-on.
I've been following Annelise over at Bye Bye Beehive for a while and she has this itsy bitsy tiny little challenge where she goes 365 days with NO styling products, dye's, cuts, teasing the whole nine yards. You get the idea right!? CRAZY is what I thought and now I decided to do the same but with some minor changes. Now let's give credit where credit is due to the person that came up this this idea to begin with. She got the idea from Kelli formerly at Stopshop. You know the girl who went a whole year without shopping. Yeah, that's not happening. I'll be headding the route Annelise at Bye Bye Beehive did. One year, 365 days with no hairsprays, mouse, dryers, dye's and every other possible hair product you can think of. Why? It's simple really, Ever since the ripe old age of 12 when I got my first two stripes of beach blonde highlights (proud moment for me) I've been dying and frying my hair and let's just say my hair has seen better days. I have been pretty much every color in the book red, all shades of brown and blonde, black (not my favorite) and plum/purpleish. That's not including highlights. Then, there's the curling irons and flat irons and hairdryers. I mean, I went 2-3 years with straight hair ONLY because I HATED my curly hair (teen issues). On top of that I never did treatments that help keep your hair healthy. Moving along. I changed the rules to apply to my hair type.
RULES
  • 365 day project, begins Sunday, January 1, 2012 and ends Monday, December 31, 2013.
  • I will begin the challenge with a trim and photo.
  • I won't color beforehand. The goal is for healthier, longer and more manageable hair.
  • NO highlights or hair dye's.
  • NO hair cuts. Trims only to keep the ends healthy.
  • Absolutely NO teasing, ratting or back-combing. I don't do this to begin with but just incase it's written here.
  • NO heating tools: blow dryers, straighteners, curling irons, hot rollers, etc.
  • NO styling products: mousse, gel, pomade, serums, foams, and hairspray UNLESS 100% ALL NATURAL styling products.
(that's my ONLY EXCEPTION because I do have really curly hair and it would be pretty impossible to go without anything so I kept it at all natural ingedients. I will post the products/ingredients so you know I'm not lying about it being earth friendly or whatever you want to call it.)

It's fair. It's simple. And I'm heading into this head strong! I'm not even sure if that made sense.

I'm already 2 days behind but I'll post the first 3 days tomorrow morning! PS. I'm also participating in a photo a day for 365 days challenge!!! I'll post those up too.
